Unmotivated Salad

I had something to attend tonight. I was so unmotivated I didn’t even go to the store to buy something. I figured whatever I was bringing would come from things in the pantry. The pantry that was fairly empty when I left town a month ago.

After taking stock, here’s what I ended up with … a slightly modified bean salad.

Unmotivated Salad

1 15-ounce can black beans, rinsed, drained

1 cup drained canned kidney beans, rinsed

1 15-ounc can diced fire roasted tomatoes, drained

1 1/4 cups chopped red onion

1 15-ounce can corn, drained

Dump into bowl. Mix together.

In small jar – or bowl emulsify:

3 tablespoons fresh lime juice

1 tablespoon olive oil

1 1/2 teaspoons Ancho chili powder

2 1/2 teaspoons ground cumin

Sea Salt, fresh cracked pepper to taste

1 cup chopped fresh cilantro

Pour dressing over salad ingredients; add fresh cilantro – toss, serve.

I didn’t think it was that great. On the other hand, I brought home no leftovers. Perhaps I’m being too harsh a critic.

Ps: I did not have fresh cilantro on hand (obviously, because it would just have been a puddle of slimy goo after a month). I did stop at the store on the way there and buy that – then chopped when I arrived.

Someone has figured me out ... this is what they said about my need to take food with me everywhere:

"I can just see it.. Mit's discomfort with social situations is alleviated by carrying food. Not eating it, carrying it. So, shen ever she has to buy new shoes, instead she carries a casserole.

If she goes grocery shopping, it's an elaborately mixed bag of dessert candies, all made by her very own hand. Movies? Popcorn, of course, that she picked herself. Heading out to see an author giving a public reading? That could either be a coffee cake or something made with organic bean curd."

I told him I'd NEVER share my organic bean curd with the public. I'm too stingy!

LOL at the vision of the coffee cake at the bookstore. And the beans sounded great. I wouldn't have known to add the dressing - great idea.
